Purple Sweet Potato Quesadillas
1 package whole wheat or corn tortillas
one small handful Manchego cheese, sliced
one purple sweet potato, baked in 425 degree oven for approximately one hour, inside scooped out and mashed (eat the skin separately!)
Place one tortilla in skillet without adding butter or oil - it won’t stick.
Place a thin layer of mashed sweet potato on top of quesadilla.
Sprinkle cheese to cover surface.
Top with second tortilla.
Turn flame on low. Cook several minutes on each side until quesadilla is lightly browned and cheese is melted.
Cut into pieces and serve. Enjoy!
