Pineapple Mango Kiwi Salsa
jicama to taste
several mint leaves, torn or cut into small pieces
juice of 1 – 2 limes
optional: avocado, strawberries, honeydew, cilantro, a little bit of jalapeno
Dice pineapple, mango, kiwi, cucumber and jicama.
Toss with mint and lime juice and enjoy!
This recipe is a fun way for children to explore herbs such as mint or cilantro, and an introduction to “kitchen tools,” such as a lemon-lime squeezer for children to squeeze the lime. It’s also an opportunity to introduce children to jicama, a mild-tasting Mexican root vegetable. Children and adults enjoy this easy and refreshing salsa.
